Zahter, whose Latin name is 'Thymbra Spicata', is from the family of honeybabagiller. Its homeland is the Eastern Mediterranean and the Black Sea. Although it grows almost everywhere in our country, Zahter of Gaziantep and Antakya regions is famous. It is known for its similarity to thyme. It has a sharp odor and a slightly bitter taste. It is a shrub-like plant that blooms pink flowers in July and August.
Zahter is more than a family of plants. It can be consumed by putting it in a bowl and dipping it in olive oil, as well as adding a different flavor to the dishes with its different aroma and smell. It enriches almost any meat dish with its aroma. It can be indispensable for salads. It also freely exhibits its taste in all kinds of soups, eggplant dishes, and tomato dishes. During the Ottoman period, zahter was an indispensable herb, especially for breakfast.
